Dawn Patrol Colorado Single Malt Whiskey - $69

Dawn Patrol Colorado Single Malt Whiskey
Dawn Patrol Colorado Single Malt Whiskey

Dawn Patrol Colorado Single Malt Whiskey is a special whiskey named for hard-core skiers who are up before dawn to snag powder lines while others sleep. It started out well over a decade ago as an experiment with cherry-wood smoked malt barley. We wanted to see what would happen if we made a whiskey with a significant percentage of cherry-wood smoked barley (in this case 45%) and the balance of two-row malted barley.

Aged for a minimum of five years in #3 new American oak and with the magic of high-altitude Colorado aging we have a produced a fully mature spirit that stands up to the legacy of early-morning ski mountaineers and backcountry skiers.

Dawn Patrol, like all our whiskies, is a big whiskey that is bursting with leather, smoke, chocolate and baking spices. It’s wonderfully balanced and the finish goes forever. Each batch is a single barrel release typically consisting of only 250 bottles. Dawn Patrol is made from 100% malted barley. Mashbill: 55% two-row San Luis Valley grown malted barley and 45% Cherrywood smoked malted barley.

Aged minimum of 5 years in #3-charred New American Oak

49% ABV.

Tenderfoot American Malt Whiskey - $55

Tenderfoot American Malt Whiskey
Tenderfoot American Malt Whiskey

Tenderfoot American Malt whiskey is made from our special blend of local Colorado malted grains including 2-row malt barley, cherrywood smoked barley malt*, dark chocolate barley malt, malted rye, and malted wheat. This unique combination of grains gives it balance with a hint of smoke, chocolate and a long spicy finish.
It’s not a “Single Malt” since we use malted rye and malted wheat in the mashbill, rather this is a whiskey that is pioneering the return of the little-known category of Malt Whiskey. This whiskey benefits from the intense effects of maturation at 7089ft (2159m) in the Colorado mountains. Our malt barley, malt rye and chocolate malts are local Colorado grown in our neighboring San Luis Valley.

Tenderfoot Whiskey has a rating of 85 points from Whiskey Advocate, and an 89 point “highly recommended” rating from the Beverage Tasting Institute

Treeline Gin - $35

Wood's High Mountain Distillery Treeline Gin

Treeline Gin, our flagship gin, is created in a traditional dry style with our proprietary blend of nine botanicals and spices. In the spirit of the mountains, it features clear juniper nose backed up by peppery spices, licorice, and earthy tones.

Ingredient List
● Juniper Berries
● Star Anise
● Lemon Peel
● Angelica Root
● Cassia Bark (Vietnamese cinnamon)
● Grains of Paradise (spicy pepper)
● Cubeb Berries (earthy pepper, eucalyptus)
● Coriander
● Cardamom

How do we make our gin?
We make our gins via direct vapor distillation to an inline gin basket. The spirit vapor is forced through the gin basket that contains our botanicals. This process infuses the flavors of the botanicals into the spirits before being condensed to form gin. We prefer the vapor infusion process over maceration because it picks up the flavors of the botanicals without carrying over small amounts of oils. We believe this makes a cleaner, better spirit.

Treeline Barrel Rested Gin - $40

Treeline Barrel Rested Gin
Treeline Barrel Rested Gin

Our Treeline Gin with time spent aging in new #3 Char New American Oak barrels using a complex aging process of combining from spirits from several barrels ranging in age from six months to two years. This spirit marries the flavor of our Treeline Gin with the effects of oak aging to create a spirit of remarkable complexity. The barrel aging adds notes of cinnamon, vanilla and baking spices to create a gin that drinks like a whiskey and is perfect served neat, on the rocks, or mixed in classic cocktails such as the Negroni, London Mule, or Old-Fashioned.

Treeline Barrel Rested Gin was awarded a Gold Medal at the 2018 San Francisco International Spirits Competition.

How do we make our barrel-rested gin?
Treeline Barrel Rested Gin starts out life as Treeline Gin but rather than proofed to bottle strength and bottled, we proof it to barrel strength (115 proof) and barrel it in new (and refilled as first-fill and second-fill) #3 charred American oak barrels (not previously filled whiskey barrels). The gin is aged separately for around 6 months in fresh barrels, one year in first-fill and two years in second-fill barrels then blended from various ages and bottled.
The barrel aging contributes color, vanillin, lignin, and tannins that tend to bring cinnamon, vanilla, and baking spices forward while sending some of the more subtle Treeline gin flavors such as anise, and pepper to the background. The key to Treeline Barrel Rested Gin is that it is harvested from the barrel while the juniper and gin botanical characteristics are still predominant. That is, we don’t want Treeline Barrel Rested Gin to lose its “gin-ness”; we want it to be a gin first but with the characteristics that can only come from time spent in a barrel.
